February is the month for planting Mentha arvensis (Cornmint) and Mentha piperita (peppermint).

In the case of arvensis, the farmer buys bags of roots, divides these and plants these in rows. This is the main mint crop, approximately 100 times the size of the Piperita crop. The Piperita is a more sensitive crop which is transplanted from plant nurseries at this time of year by the farmer, usually as a small crop in a small area of their field. In recent years fewer farmers are growing Piperita, favouring the faster growing, higher yielding and more profitable arvensis crop.
The arvensis is fully harvested 90 days from planting, whilst the Piperita crop is harvested twice, the first cut 60-75 days after planting and the second cut 90 days after that, so normally a late spring and late summer harvest.
